  Wheat Flour
There are many varieties of wheat worldwide and these may be classified in terms of their growing season, their colour or their protein content and quality. In general, the harder the wheat kernel, the higher the protein content of the wheat kernel. Based on this, there are 3 basic varieties of wheat:

Hard wheat contains a high percentage of protein (gluten) and is used for breads and fine cakes, as well as fresh pasta items

  Gram Flour

Gram flour is flour made from ground chana, a legume otherwise known as chickpeas. it is known as chickpea flour, garbanzo flour, or besan. Used in many countries, it is a staple ingredient in India and Bangladeshi cusines, and in the from of a paste with water or yoghurt, a popular facial exfoliant in the indian subcontinent. Moreover, when mixed with an equal proportion of water, can be used as an egg-replacer in vegan cooking. Gram flour contains a high proportion of carbohydrates but no gluten. Despite this, in comparison to other flours, it has a relatively high proportion of protein.

  Corn Flour

It is used primarily in thicken or bind processed foods. It is also used in frozen foods, canned soups, pie fillings, salad dressings, canned fruits and many more food products.

Corn starch also can be used in paper making ,textile, environment protection industries.
  Tapioca Starch
The tapioca starch can be used for a variety of purposes, particularly, as ingredient for preparing food that requires condensed, thick and viscous quality such as the Rad-Nah, fish maw soup. Or it may be used for making sweets that are characterized by sticky, viscous and springy quality like that of "BuaLoy, Krong Kraeng", etc
